Butternut Squash Mini-Pizzas

This is a delicious recipe from my mom. She had ran out of dough, but little did she know she was making it healthier and gluten-free!

Yields: 4 servings

Calories: 150 per serving (each serving is 3 mini pizzas)

Time: 15 minutes to prep; 30 minutes to bake


  • 1 large butternut squash, cut in around 12 slices (discard gourd)
  • 2 slices Swiss or Provolone cheese
  • 2 slices of ham
  • Basil
  • Sal and Pepper to Taste
  • 1 tablespoon olive oil
  • Oregano to taste

Preheat the oven at 350 degrees.

Start by peeling a medium to large butternut squash. Then slice into around 12 slices and discard the gourd. Place the slices on a cookie sheet; season with salt and pepper and olive oil.

I like to slice also some cherry tomatoes and place on top, before it goes into the oven.

Bake for around 35 minutes or until squash is soft and the tomatoes can be mashed with a fork.

Then, add the cheese and the ham, followed by the basil. You can really add anything you want! Try feta cheese and spinach, or olives and mozzarella.

Then, put back into the oven.

The mini pizzas are done with the cheese is melted! Remove from the oven and wait around 15 minutes to cool down. Enjoy!
